Tapas? They are small snacks that originated in Andalucia in the 19th century to acompany a sherry. Stemming from a bartenders practise of covering a glass with a saucer or tapa (cover) to keep out flies, the custom progresses to a range of appetizing varieties of cold and hot dishes serving regional specialities.
